Dry ice is the solid form of carbon dioxide. A block of dry ice has a surface temperature of –78.5˚C and as it breaks down, it does not melt into a liquid but instead, gradually reverts to its original gas form. This solid-to-gas transition is known as sublimation and, unlike with ice, means that there is no messy liquid left over.
Because it is extremely cold, non-toxic, colourless, odourless, and tasteless, and with its sublimation feature, dry ice is the ideal solution for a wide variety of industries. Food grade dry ice is commonly used as a cooling agent for wholesale food and always as part of a controlled processes.
From the moment the CO2 has been compressed into a solid form, it slowly begins to revert to its original gas form; a process known as sublimation.
Proper storage is essential to ensure that your dry ice lasts as long as possible. Generally the more dry ice you have in a container (and the less airspace) then the longer it will last. Dry Ice, at -78.5°C, will freeze and keep frozen everything in the container until it is completely sublimated. These frozen items will still take some extra time to thaw because they will have been so cold.
